I recently reached out to my acupuncturist (who I adore!) to review what I eat via my vegetarian diet. I want to make sure I am getting a sufficient amount of the right nutrients to continually improve my physical and mental health. I’m also curious to learn about new foods to experiment with that will diversify my diet because I tend to eat the same things over-and-over.
The list I sent him is based on daily foods I started eating when I became a vegetarian 5 years ago, after having eaten meat for 30 years. I can’t emphasize enough how drastically my health has improved, but here are a few benefits I’ve experienced:

You may be wondering why I reached out to my acupuncturist, specifically, to ask about diet which I can touch on in a separate post. You may also be curious about why I became a vegetarian in the first place. I touch on the reasons and inspirations in this post.
I rely on this vegetarian diet to lead the most healthy and spirited lifestyle I can, which seems especially relevant and important to share given the health pandemic we’re going through.

I opt for selections that are fresh, organic (to reduce exposure to toxins/chemicals/pesticides), and local (to support smaller producers and cut down on farm-to-table time).
Comparing having been on a vegetarian diet for 5 years versus 30 years as a meat-eater, I wholeheartedly say that vegetarianism has been the best decision I’ve made for my well-being. That’s not to say it can’t be improved or expanded…so I’ll follow up when I hear back from my acupuncturist. Until then, be well!
